About: Chef Pam Yeo
Pam Yeo is a culinary artist whose most cherished childhood memories are filled with the rich aromas from her Malaysian Peranakan grandmother’s kitchen. Graduating with honours and earning a Grand Diploma in French Culinary Arts from New York City, along with her experience as a private chef and time at the James Beard Foundation, have significantly shaped her approach to cooking. Over the past 15 years, she has immersed herself in researching and analysing flavour profiles and nutritional aspects of cuisines from around the world. She has had the opportunity to live on four continents, and is constantly thrilled each time she encounters new ingredients, flavours and food pairings during her travels. Pam believes that a deep curiosity about the culture and history of a place not only offers recipes but also engenders a profound respect for its people and their food.
Her personal food philosophy aligns with her heritage, which is a blend of diverse cultures. Combining her knowledge with a mindful avoidance of letting preconceptions dominate, she believes that incorporating unconventional techniques into traditional cuisines can enhance texture and flavour, as well as improve accessibility and efficiency in the culinary process.
What matters most to her is keeping the client's comfort and needs in focus and ensuring that recipes are easy to prepare in a conscious and sustainable way. This flexible customised approach enables her clients, especially those cooking with dietary restrictions, to effortlessly recreate dishes at home, craft family favourites, and adapt recipes to suit their family's changing needs. This process can be effectively managed by implementing gradual changes, allowing time for adaptability.

This background helps me approach unique dietary needs with both care and creativity.”
Currently, Pam is a stay-at-home mum based in Seattle, USA, with boys who have notably sophisticated palates. They constantly challenge the way she cooks on a daily basis. In addition to her role at home, she teaches small group cooking classes and is deeply passionate about recipe development bridging the gap between lifestyle medical professionals/dieticians and their patients and helping them stick to their new diets.
