“Over the last 15 years as a recipe developer, culinary instructor and private chef, I've focused on developing recipes and techniques rooted in cuisines I've enjoyed and recreated. Whether designing bespoke menus for private events or reimagining traditional dishes, I prioritise flexibility and creativity. What started as creating memorable dishes for events has grown into something much more meaningful - developing and adapting tailored recipes for specific dietary requirements."

“I'm so blessed to have Pam help me out with my confinement meals when my parents couldn’t help. She reached out quickly before my due date to find out my likes and dislikes, making every effort to accommodate my taste without compromising on the nutrition I need. Passionate about cooking, she used her expertise across cuisines to curate an exquisite culinary experience which caught me pleasantly surprised, given the requirements of confinement dishes. Pam's love for cooking also led to her thorough research on confinement nutrition, as can be seen in her menu. The menu not only offers different meal options at various stages of confinement, it also describes the focus of recovery for each of the four weeks as well as the ingredients used to achieve that goal. Her commitment to providing delicious and nutritious food doesn't just end there. She went the extra mile to provide me with specific reheating instructions for every dish and was meticulous when it came to the presentation of the meals. I never thought I'd say this but, boy, I miss my confinement food from Pam! Thank you so much!”

“At my age, you get set in your ways, especially when it comes to food. I’ve been eating the same kind of meals for decades, and frankly, I wasn’t keen on changing. But after my diabetes diagnosis, I knew I had to make some adjustments, even though the thought of giving up my favourite foods was tough.
Enter Chef Pam. She didn’t just throw a bunch of bland, tasteless recipes at me. She took the time to understand what I liked and worked around that. The meals she came up with were diabetic-friendly, sure, but they didn’t taste like it. She showed me how to make dishes that were not only good for me but also reminded me of the foods I’ve always loved.
What really impressed me was how easy the recipes were to follow. At my age, I don’t want to fuss around the kitchen too much, and neither does my wife. Chef Pam’s recipes fit right into our routine. We’ve been able to make these small but important changes to my diet without feeling like I’m giving up the things I enjoy.
It’s been a real blessing. I’m eating healthier now, but I’m still getting that comfort I’ve always associated with my meals. Chef Pam has made this whole transition so much easier for us, and for that, I’m truly grateful.”

Pam's goal is to support their well-being in a gradual way. The key is creating health-conscious meals that deliver on nutritional needs and flavour, while recognizing the emotional and psychological comfort that food can provide, especially for those facing health challenges. This new path has been incredibly fulfilling, as it allows me to help bridge the gap between dietitians and patients needing dietary behavioural intervention and a sustainable method of eating.

“The nutritionist provided a well-rounded plan focusing on balanced nutrition, which I truly appreciated. However, as someone deeply rooted in Indian culinary traditions, I found it challenging to apply these guidelines to the recipes I’m familiar with in America. Adapting my favorite dishes to meet the dietary requirements for chemotherapy wasn’t as straightforward as I had hoped.
I found myself at a loss for how to modify traditional recipes in a way that would align with the nutritional advice. My usual meals, rich in spices and often high in fat or sugar, seemed difficult to adjust while maintaining their authenticity and flavor. I wanted to stay true to my culinary roots but also needed to ensure that my diet was supportive of my health needs.
What I found incredibly helpful working with Pam was a more personalized guidance on how to recreate my favorite Indian dishes in a healthier way. Specific suggestions on ingredient swaps or cooking techniques that could align with my treatment while respecting my cultural preferences made a big difference.
This journey is complex, but I’m hopeful that with this additional resource and support from Pam, I can find a balance that respects both my health and my cultural heritage.”
